We just picked up the Monster Manual 2 recently, and it has a wonderful new template.

Yes, as in pick a beast, pick a humanoid, blend the buggers.
And it's given me an idea for a wacky D&D 3rd Edition-based MUD. Where instead of picking the usual races, you pick the two 'base components' of your character. And then, you're "gifted" with a set amount of levels to spend to bring your 'overall' level up to a certain point, say 15th-20th level. So everyone starts off moderately to decently powerful, with lots of fun, interesting powers, but balanced to a very great degree.
Mind you... implementing some of those powers would be a bitch, but most of the rest of it would be an absolute blast! :-)
